While I was away, I had no control over what to eat. I wouldn't consider myself a picky eater but I do like fresh and simple foods that don't tend to be sold at restaurants. I guess I am a bit of a control freak and prefer to prepare my own food just the way I like it; but who doesn't?
Whilst doing daily catch up's on bloglovin during my break, I realised that there are a lot of different recipes and meals that I want to try once I got home. One blogger in particular does a lot of easy-on-the-wallet vege meals and I have picked a few that I want to try.
1) Garlic Knots [I bet Dan would looove these]
2) Blueberry Smoothie
3) Hummus Melts
4) Pesto Quiche with oatmeal crust
5) Cheese and Apple Bagels
6) Homemade Hummus [not pictured]

What I love the most about the wonderful collection of recipes by Ashley and Stephen, is their simplicity. You don't need to go out and spend $8 on something you only need 1/2 a teaspoon of and they are big fans of substituting ingredients.
Chili Bean & Spinach Pizza
I have my own favourite eezy-peezy dinners that I can never get enough of. My absolute favourite would be pizzas with chili beans & spinach. If there is something else that needs to be used I will chuck that on too e.g. avocado, capsicum or mushrooms. I don't put a sauce on the base because the chili bean sauce, when heated, turns into a sort of base sauce [does that make sense?]

It just needs to be grilled with some cheese on the top [mozzarella for me please!] and your done. I have lunch versions of these too; replace pizza base with wholemeal pita pockets. Quick and easy and much nicer than soggy sandwiches.
